Tis rhubarb season…. and for some reason this year the rhubarb here in Redwood has been very slow to come on. I reckon it is just tired of where it is, and we will need to move it to new ground later in the year.
We both love rhubarb, and we’ve a lot of plants, so I’m always trying to think of new things to do with rhubarb.
While pottering about the other day, I had some new inspiration!
I had made a Ginger Custard last year, em! Ginger Custard + Rhubarb = a match made in heaven, eh?
So it developed from there…. I made some of my now almost infamous pastry.
Poached some really sweet fresh rhubarb – wash, chop into chunks about 1 inch long, poach in a little water and some sugar.
Made my custard….. this is still tedious and lots of pots involved but worth the effort.
Line your tart tins with pastry (I didn’t even blind bake). Place some of the lovely rhubarb pieces in each pastry case, pour over the custard and sprinkle with a little brown sugar.
Bake at 180 deg C for about 30 minutes.
And the result…. delicious mini tarts.

These look and sound gorgeous Margaret, like something you’d see in a Pastry Shop. I will definitely make these. Love new ways with rhubarb too, other than just stewed with *coughs* bought custard, but no more of that either I think 🙂

I was delighted that this is the first year I have rhubarb having planted it 3 years ago! Last year was bad due to lack of rain apparently but this year mine is still spindly so started watering it……so here’s hoping! We used to make rhubarb custard tarts in bakey I managed (real Parisian classic).
Oooh… don’t know if I’d call them a Parisian Classic… but then again if you tell me they are I shall rename them! They are very nice though, and I’ve shared with a few strangers who’ve agreed!
Hope your rhubarb comes on… ours is very thin this year, but really sweet… to make 8 of these tarts I used 6 small sticks of rhubarb.

Isn’t it just a classic… rhubarb and custard? I also love stewed rhubarb with yoghurt… which is going really posh, eh?
Rhubarb and custard is yum , never tried rhubarb and yoghurt that is posh :). was looking at some in tesco the other day it looked a little like rubber :).
