My Mum was known for her apple tarts!
Everyone in Malahide knew about her apple tarts, and anyone who came to visit did not leave if she had been baking – they made sure to stay for some!
Over the years I have tried various pastry recipes, from various books and none have that same flakiness!
So here’s how Mum made her pastry….
1 lb of flour, with 4 oz of cookeen and 4 oz of Stork, rubbed together and mixed with cold water. Then let it sit in the fridge for a couple of hours.
I’ve adjusted her recipe to account for the fact that Farmer Alfie is now rendering our own lard.
So now the recipe goes like this:
1 lb flour, 4 oz butter, 4 oz of lard, mix with cold water, and generally I leave in fridge overnight.
This pastry I use for everything – sweet or savoury.

I’m trying this pastry tonight to make your sausage rolls! I have your sausage meat ready, so can’t wait to see if I can get it to taste as good as the ones I’ve sampled in the farm!
