Is it my imagination or is there just a glut of elderflowers this year?
We are surrounded by them! The perfume at every corner of the house is amazing. I do love the smell of elderflowers.
I made my first batch of Elderflower Syrup, as per Darina Allen’s Ballymaloe Cookery Schoolrecipe, for the visit of the Irish Foodies on tour. It was a big hit on a hot afternoon.
I have since made a second batch!
It is soooo simple to make!
Ingredients:
- 6 Elderflower heads
- 6 oz. caster sugar
- 1 pint of cold water
- zest and juice of 2 lemons
Method:
Put sugar and water in saucepan, and stir over medium heat until sugar dissolves.
Shake Elderflowers to make sure there are no bugs left in them!
Add the elderflowers to the saucepan, boil for 5 minutes. Remove from the heat and add the zest and juice of the lemons.
Let cool. And stand overnight to allow flavours infuse.
Next day strain and bottle. I strain through a sieve first and then through muslin.
Delicious diluted to taste with sparkling water on a hot day!
I made elderflower cordial last year and will definitely be doing so again this summer. Really nice post. Also good idea to shake the flowers, those little buggers will hide anywhere!
