I am almost feeling fraudulent posting this as a ‘recipe’. It is just something I do all the time without even thinking about it. And I am quite sure most of you do too.
At two recent events though I made my cole slaw and it was declared ‘the best ever’??????
So here goes I am sharing it.
Last night I had to make it to get some idea of proportion…. cos normally it is just whipped together!!! and it is all judged by ‘eye’. This amount made enough for two of us. I also suspect the reason for the ‘best ever’ tag is the fact that it was freshly made!
Ingredients:
- 1/4 head white cabbage (or any colour cabbage you like to eat raw)
- 1 medium carrot
- Lots of ground black pepper
- 2 – 3 dessert spoons of mayonnaise
Finely slice the cabbage. I prefer to slice, but you could use a machine or a mandolin. Peel and grate the carrot. Add about 12 twists of black pepper (we like the peppery bit). When you are ready to serve, mix in your mayonnaise.
Et viola!
Gosh that’s amusing as we too had homemade coleslaw but mine had a secret ingredient added….. OK I’ll tell you since you ask….. white wine vinegar (2 capfuls) gives it a little ‘zing’ and as they say – yummie

As I said I feel such a fraud putting this up as a ‘recipe’. It is such a basic one in this house! Like the idea of the wine vinegar might try that!
