As the theme for January’s Irish Foodies Cookalong was “budget/leftover”, I decided it was a good day to start clearing out the fridge and the freezer! They were both in a dreadful state and this was just the motivation I needed!
I may have carried the theme to excess as I used it as an excuse to do a ‘leftover’ lunch and continued it on into the following week…. that freezer really did need to be cleared out! 🙂
So the fridge clear out gave us lunch on Cookalong Day comprising of soup made up from some leftover Tomato Sauce, leftover Piperonata (we had had pizza earlier in the week). Add in some stock. The piece de resistance actually turned out to be the bowl of the Deluxe Tomato & Sausage Pasta from another meal during the week being thrown in too! So you had a kind of Minestrone Soup in the end.
As you can see it didn’t last very long! That and some fresh bread perfect budget lunch!
Dinner that evening was the delicious Turkey Con Chilli a la Jamie Oliver which is a recipe I discovered last Christmas. So if you still have some leftover turkey lurking in your freezer – get it out and try this.
Ingredients:
- Olive Oil
- 2 red onions, chopped
- 1 leek
- 1 red and 1 yellow pepper
- 1 red and 1 green chilli
- bunch coriander
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp runny honey
- 3 tbsp white wine vinegar
- 600 gr leftover turkey
- Juice of 2 limes
- 3 x 400 g tins tomatoes
- 1 x 400g tin butter beans
- Sour cream
Method:
Heat some oil and fry off vegetables for c. 5 minutes. Add coriander stalks, cumin and paprika. Cook for another 10 minutes. Add honey and white wine vinegar.
Shred turkey and add to pan. Take off heat. Add tomatoes and beans. Pop into oven at 180 deg. C for 2 hours.
Squeeze in juice of limes, scatter over coriander leaves and some sour cream.
Jamie serves a guacamole with the chilli, but as I didn’t have the avocados and was determined to keep to a no spend budget we did without! 🙂
