We are still dealing with gluts of vegetables here. Not a bad complaint at all! And I am sure many others are too. So I thought I’d share this amazingly simple and delicious Tomato Soup. The recipe comes from the aptly named book “Soups – no-fuss recipes for hearty soups” by Tonia George.
It is so quick to make, no fussing about…. and judging by our lunch guests reaction today we aren’t the only ones who think it is nice.
Ingredients:
- 2 red onions, chopped
- 3 garlic cloves, crushed
- 4 tblsps extra virgin olive oil
- 2 kg plum tomatoes roughly chopped
- 1 – 2 tblsps soft light brown sugar
- 2 tblsps red wine vinegar
- 750 ml Vegetable stock
- Sea Salt and Freshly Ground Pepper
- You could also add in a red chilli to add a bit of zing!
Method:
Put the onions, garlic and olive oil in a large saucepan and cook over a low heat for 10 minutes, stirring occassionally. Don’t let them brown.
Add the tomatoes, sugar, vinegar and stock. Season well. Bring to the boil, then turn down the heat and simmer for 30 mins. stirring occassionally.
Transfer to a blender (or I use one of those hand held blenders) and liquidize until really smooth.
Divide into bowls and serve.
