I had almost forgotten about this salad! I think this came from a google search of different things to do with strawberries!
I have it in my old recipe notebook and only remembered it recently when we had another bumper crop of strawberries.
I had served this up at a dinner party a couple of years back – and it does look really impressive!
Ingredients:
- 1 cucumber – I like my cucumbers peeled, and sliced thinly.
- 500 g strawberries – sliced
- Handful of mint leaves
- 4 tsp wine vinegar
- 1 tsp caster sugar
- Salt & Pepper
- 200 g soft white goat’s cheese
Method:
Arrange the cucumber and strawberries on plate, scatter with mint leaves. Mix the sugar and vinegar together and sprinkle over. Season with salt and pepper. Scatter the crumbled cheese over the top.
And the blue flowers are from my Borage plants!
Simple and delicious…. try it before strawberry season is over! 🙂
