A slight variation on the normal basil pesto! This came about because of an over-abundance of rocket….
As you can see we have an awful lot of rocket this year! I didn’t plant any this year….. this is last year’s crop which has reappeared! It is also quite a bit stronger in flavour this year.
We have been using it in salads, but just can’t eat it quick enough. I thought I’d make some pesto before it goes to seed and we loose it totally.
This was a complete experiment so no measurements were taken – it was more based on how it was looking!
I had a basket of rocket and added olive oil slowly to it as it was blitzing. Add a handful of toasted pine nuts, and I actually used some grated Mossfield Organic Mature cheese.
It tastes yummy!
