Tis rhubarb season…. and for some reason this year our rhubarb has been very slow to come on. I reckon it is just tired of where it is, and we will need to move it to new ground later in the year.
We both love rhubarb, and we’ve a lot of plants, so I’m always trying to think of new things to do with rhubarb.
While pottering about the other day, I had some new inspiration!
I had made a Ginger Custard last year, em! Ginger Custard + Rhubarb…. has to be a match made in heaven, eh?
So it developed from there…. I made some of my now almost infamous pastry.
Poached some really sweet fresh rhubarb.
Made my custard….. this is still tedious and lots of pots involved but worth the effort.
And the result…. mini tarts.
