Have you put up your calendar for 2012? The two I’ve put up this year are both based around food. Surprise!
How often are the calendars put up and then the recipes or pictures never looked at! Well last year we had the BBC Good Food Calendar and tried a couple of the recipes from it – our favourite was the Tomato, Basil and Feta loaf.
Monday was designated the ‘let’s use up some of the leftovers in the fridge day’! We had lots of yogurt, oranges, egg whites…. the list went on. So I started off with this cake which I have adapted from the January recipe on the Good Food Calendar 2012.
Not bad looking at all! (And it can be frozen at this stage too!)
Ingredients:
for the cake:
- 175 g/6 oz butter, melted and cooled, plus extra for greasing
- 225 g/8 oz self-raising flour
- 175 g/6 oz caster sugar
- Grated zest of 2 oranges
- 150 g natural yogurt
- 3 duck eggs
for the frosting:
- 125 gcream cheese
- 40 g/1.5 oz icing sugar
- 1.5 tbsp fine shred marmalade (we used a lovely marmalade given to us as a gift by David (@ShakeySemple)
Method:
Heat oven to 180 C/ 160 C fan/Gas 4. Grease a 1 kg/2 lb loaf tin and line with baking parchment.
Mix the flour, sugar and orange zest in a large bowl. Beat the eggs with the melted butter and yogurt, then pour into the dry ingredients and stir well.
Tip the cake batter into the loaf tin (it is quite a wet mixture). Flatten the top and bake for 1 hour until a skewer inserted comes out clean. Cool in the tin. (You can freeze at this point.)
To make the frosting, beat the cheese, icing sugar and marmalade together with a wooden spoon until well mixed. (The original recipe calls for twice the amount of ingredients for the frosting – but I found this way too much, so would recommend this quantity.)
Spread the top with the marmalade frosting and chill until ready to serve. Return to room temperature before eating.
The verdict? According to my young neighbour taster… “that cake is mighty’!

Yum – like the idea of using duck eggs so will have to give this receipe a try. Love ’em but never use them in baking!

We made cake very similar last night to this one except ours had lemon zest (and juice) and a nice tub of yoghurt in it.
I love the ‘clean out the fridge’ nights or even the ‘freezer nights’. The goodies stashed away are always delicious and evoke memories of when we originally made the dish and who we shared it with.
Now, about the calendar – we have a few around here – one from church, one from the local seed company, one from a vegetable producer and one from NUIG. I was thinking that we needed one with pigs on it……and some photos of sizzling bacon….. xx

Hi, im new to your blog, found you because I googled the recipe. I too have this calendar and plan on baking each recipe each month. Made this cake today, your right far too much frosting, becomes massively sickly! The cake is nice and moist, and tasty, my other half and son agree, which is always a bonus.
Rachel, thank you for stopping by! Yes, way way too much frosting… but I used what left over I had as a filling in a pavlova (mixed with some whipped cream) and it was a big hit!
