You will know by now that I have a wheat intolerance. It is amazing the areas that this causes difficulties!
Breakfast cereals are the biggest problem…. there are very few that are wheat free! For a while Lidl did stock a wheat-free muesli but that has stopped. So now I make my own!
I have adapted the Ballymaloe Nut & Grain Muesli (as it includes Weetabix).
Ingredients:
- 7 oz Oat Flakes
- 7 oz mixture of Barley Flakes, Bran Flakes, Linseed (or whatever, flakes or seeds I have in the store cupboard)
- 5 oz of mixed dried fruit…. again, I use whatever I have raisins, dried pineapple, prunes, sultanas.
I have put sugar in, but have decided I prefer not to, and just add the sugar to taste with each bowlful.
This lasts in an airtight container for weeks…. and last’s me about a month!
