There is only so much jam you can have in the house! And I am not particularly fond of blackcurrant Jam, so faced with a glut of the fruit last year, I went googling!
And this is what I found!
My notebook just says ‘Danish Schnapps Recipe”! Apologies to whoever invented it!
The worst part of this recipe is the topping and tailing…. I hate that job!
The end result, however, is very nice. Takes months to mature. We had it as an aperitif on New Year’s Eve!
Ingredients:
- blackcurrant
- 75 ml of vodka
Rinse blackcurrant. Dry on kitchen paper. Fill half jar or bottle with berries. Top up with vodka.
Steep for 3 – 12 months in a dark place at room temperature. Shake lightly from time to time.
It develops an amazing colour and will be ready just in time for Christmas!
