It’s Apple Time…. and of course, you have to add cinnamon! When these are cooking there is a real Christmassy smell in the house! I know a bit early for that but the muffins are nice. 🙂
This recipe came from that same little Apple Recipe book from The Big Apple Association. That’s the same book as the Apple Beer which I hope you are all trying! Ours has turned out very nice this year.
Ingredients
- 350 g plain flour
- 1 tbsp baking powder
- 1 tsp cinnamon
- 125g soft brown sugar
- 2 small dessert apples, peeled, cored and grated
- 125g sultanas
- 2 eggs
- 225 ml milk
- 125g butter
Topping:
- 2 tbsp soft brown sugar
- 1 tsp cinnamon
- 12 paper muffin cases
Sift the flour, baking powder and sinnamon. Stir in the sugar, grated apples and sultanas.
Mix the eggs and milk together. Melt the butter and add to eggs and milk.
Mix the liquid into the flour and combine gently. Don’t mix too much. It should look like lumpy porridge!
Spoon the mixture into the cases. Sprinkle with the cinnamon and sugar topping (you could actually get away with half the quantity, but the mixture does last for the next batch!)
Bake at 200 C, Gas Mark 6 for 20 minutes.
Make cup of tea and enjoy!
