This is Farmer Alfie’s recipe which he does every year with our windfalls! The original, which I’ve listed below, came from a little Apple Recipe Book we picked up on a visit to England a few years back.
Different apple varieties obviously, make a very different beer. Farmer Alfie reduces sugar amount for sweeter apples.
I am not totally found of this as a drink, but it is totally yummy as something to cook pork or chicken in.
Ingredients:
- 3 lbs apples
- 1 gallon water
- 2 oz ginger
- 6 gloves
- 2 lbs sugar
Method
Wash and grate apples into a large container (that has a lid). No need to core. Add water.
Leave for a week, stirring once a day.
Bottle and cork tightly. Ready in a week, but improves with age!
Grolcsh (spelling?) bottles work really well for this.
