I know it was a bit of a cheat taking part in the Irish Foodies Cookalong the way I did!
Thank you to Yvonne at Hey Pesto! who came over on Friday night and cooked a delicious vegetarian meal for us!
I am currently spending Monday – Friday in Dublin on a course, and coming home exhausted on Friday nights so it was absolutely wonderful to have dinner cooked for me, in my own home!
And what a beautiful meal it was too!
Beetroot and goat’s cheese to start.
Leek & Mushroom Strudel a la Simon Rimmer with new potatoes and roast Tiger Tomatoes.
Roasted figs with marscapone cream for dessert.
Bet you are all jealous!
