BBQ Class with Chef John Whelan of The Devil’s Menu. The course we ran in July was a huge success, so we are running a second course on Saturday, 14th August. There are still a couple of places available.
John has formerly worked with John Torode of Masterchef fame, and Garret Byrne of Chapter 1 (Dublin) and Campagne (Kilkenny) so he has lots of great hints and tips to share for safe barbecuing.
When: Saturday, 14th August
Time: 10 am – 6 pm
Where: here at Oldfarm, Redwood. (We are just off the Birr – Portumna Road. An hour from Limerick & Galway, 2 hours from Dublin and I’ve even managed to do Cork in 2 hours too!) We will issue everyone with precise directions.
Cost: €125.00 which will include lots of good food to eat at lunch and dinner!
John will discussing the different types of bbq’s – lumpwood, charcoal and gas. There will be an opportunity to use The Big Green Egg (that’s John using it in the photo).
The aim of the day, of course, will be the cooking! This will be a ‘hands-on’ course, so there will be plenty of opportunity to get involved. Numbers will also be limited, to ensure everyone can get totally involved.
There will be recipes for rubs, bastes and marinades.
Also making sure food is safe – there is a lot of talk about safe food on the bbq and undercooking food. John will pass on tips for poaching and pre-cooking to ensure safety.

What salads and accompaniments go with what? John will advise and demonstrate using local (and if possible, some homegrown) produce.
Contingencies have already been put in place – so this course will go ahead no matter what the weather does!
